Quinoa and Lentils =)

So...it's hard to get all 4 different things in during a week!  I'm giving up with just 2 healthy foods under my belt.

We ate quinoa a handful of days this week with the tofu stack...I think I cooked it too long, it looks like mashed potatoes in the photo!

I made moussaka and lentil soup on Wednesday which we've been eating a bunch as well.  The recipe had very few ingredients and was surprisingly pretty tasty!
