So here is how I satisfied the four requirements for this week:
1. Pictured below (on the right) is a lentil dish from the Indian restaurant/market called Namastey in Buena Park. The food was very aromatic and tasty!
2. & 3. Pictured below is a salad featuring green leaf lettuce, red chard (new healthy item), red and green bell peppers, and quinoa. The quinoa adds a different texture to the salad, but was didn't pack a whole lot of flavor. The dressing helped compensate though!
4. Lastly, for kale, I had some kale chips. These turned out really good, and I was so surprised to see the transition from the hearty, leafy kale to a delicious salty, potato chip-like state! Kimberly should have a picture of them.
hmmm...now I kind of want to try kale chips.
